What the numbers don't tell you

Locals mostly sit down between 9 and 10pm. Eating at 7:30pm means an empty room and a kitchen that has only just started: you leave thinking the place was no good, when the only thing wrong was the hour. Waiting sixty minutes changes the restaurant completely.
